BILLABONG
The perfect twist on a gin and tonic, this low key favourite mixes gin and Cointreau with fresh lemon and cucumber, homemade sugar syrup and mint for a refreshing but punchy choice.
WHITE RHINO
One for the sweet tooths out there; this nifty mix combines Baileys, rum and brandy sweetened up and poured over ice for a grown up milkshake.
MIDNIGHT MARTINI
The eternal favourite, there’s something timeless about sipping an icy espresso martini on a balmy summer evening. We’ve given ours an extra kick with some Patrón Añejo and vanilla and honey notes.

On Friday and Saturday evenings, the high tea salon Fancy Nance, located just around the corner of The Olsen, will be transformed into the Zumbo Dessert Bar, featuring a rotating line up of Melbourne DJs, a cocktail menu and a soft serve machine – part dessert, part disco.
