I know it’s a pretty big call to make, but these choc-chip cookies are the ultimate! What sets them apart is the fact that the dark chocolate chips are made from scratch too, making them cleaner, tastier and more decadent than ever before. Make a big batch and time how long they last.

 

INGREDIENTS:

  • 200 g (2 cups) almond meal
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • pinch of sea salt
  • 125 ml (½ cup) coconut oil, melted, plus extra if needed
  • 1 egg yolk
  • 2 tablespoons honey or maple syrup
  • 1 vanilla pod, split and scraped

 

Raw chocolate (makes 250 g/2 cups)

  • 100 g (1 cup) cacao butter
  • 100 g (1 cup) cacao powder
  • 3 tablespoons maple syrup
  • 1 vanilla pod, split and scraped

 

DIRECTIONS:

Line two baking trays with baking paper. For the raw chocolate, stir together all the ingredients in a saucepan over low heat until lovely and runny. Pour the melted chocolate mixture over one of the prepared baking trays and set in the freezer until rock solid.

Once solid, break the chocolate into small chips using a rolling pin or the end of a wooden spoon, then return to the freezer until needed. Preheat the oven to 180°C. In a bowl, combine the almond meal, baking powder, cinnamon and salt and mix well. Now stir in the coconut oil, egg yolk, honey or maple syrup and vanilla seeds to bring everything together to form a dough, adding a little extra coconut oil if needed to make the batter stick together a little better. Gently stir in 100 g of the chocolate chips .Arrange tablespoons of the mixture on the second baking tray

3 cm apart and bake for 8–10 minutes, or until golden brown. Remove from the oven and leave to cool and firm on the tray for 5–10 minutes before eating.
