A self-confessed epicurean, John Olsen has a deep appreciation of fine food and wine.

The restaurant name is a tribute to Olsen’s magnificent painting Popping Blue Bottles, inspired by his childhood days spent on Bondi Beach and his love of the sea.

Olsen’s Mediterranean travels have inspired the menu for Bluebottle. Based on seasonal availability of local produce, only the finest ingredients create a cross-cultural selection of comfort classics and down-to-earth fresh fare.

Designed by Grant Amon Architects, Bluebottle’s interior is elegantly furbished with a combination of new and recycled natural materials. Enter the calming ocean hues at Bluebottle and enjoy a variety of relaxing dining experiences.

Take a seat at the calamari-shaped bar to enjoy champagne and oysters before dinner or slide into the luscious leather banquettes at recycled oak communal tables under the striking lobster-pot lights. Enjoy a balmy evening or sunny day with alfresco dining on Chapel and Daly Streets and for special occasions you cab reserve the luxury of the private Dining Room for up to 16 people.
